Caffeine is a compound naturally found in more than 60 plants including coffee and cocoa beans, kola nuts, guarana and tea leaves. These plants are used to make many favourite beverages such as coffee, tea and cola drinks, and foods such as chocolate. Other sources of caffeine can be the caffeine added to certain medications to increase how well they work as well as diet aids.
The oils and gasses from the fatty substances in just ground coffee, along with the gelatinous colloids, cannot dissolve in water. After a high temperature pressurized extraction, they float to the surface, forming the crema and giving the espresso its incomparable aroma.
